This week I thought I would take a break from normal tech talk and speak of things culinary. I have been trying to improvy my diet, so I bought a chicken (killed alas) last week, and turned it into chicken soup. The recipe was a nice one from a jewish kosher book I have here. Its basic:
- All parts of the chicken carcus - breast meat (which I froze)
- Salt to Taste (I did about 3-4 tsp at LEAST, since its a LOT of water)
- Pepper
- 1 Leek
- 1 Onion
- 5 carrots
- 3 stalks celery
- Taraggon to taste
- Pepper (to taste)
I put it into a pot with some nice quality water (it makes a HUGE difference if you use crappy water) and boiled until hot. I removed it down to simmer, and set the timer for 45 minutes, and let it set. FInally, I strained the solids out using a nylon superbag (100 micron).
Now I just make soup 'on demand' from the yummy stock that I needed (I picked out the chicken meat from teh solids strained in the superbag). Makes a Wonderful soup that doesn't have mushy veges!
