I just came up with a nice new ginger snap recipe! It was part AI and part I. I did alter the ratio of the fats, since the dairy free fat that I use (margarine) doesn't have enough saturated fat compared to butter, I used the refined coconut fat as 1/3 of the amount to make the 3/4 of a cup of fat that the recipe calls for. I might try modifying it to use allulose, but the sugar version was a hit and NO ONE knew it was non dairy and I'm perfect gluten free! The modernist pantry (its nicer than xanthan gum), made it taste NON crappy. Also used king Arthur 1:1 gf flour. VERY nice. I almost eschew all the crappy versions of GF flour these days, as this makes GF baking SO MUCH easier!
Also have a merry Christmas. I finally bought an expensive charlie brown tree with infinitely variable lights its a hoot. My star is alas powered by lithium ion batteries, but it does look pretty.
